If your world is anything like mine, Mondays roll in like an out-of-control freight train. Knowing this is the case, I do my part to prepare myself for the chaos that is sure to come.
I’ve found the best way to start my week off on the right track is with a powerhouse of a smoothie.
A well prepared smoothie is filled with vitamins, minerals, fiber and anti-oxidants. It leaves me feeling full and satisfied while regulating my blood sugar. This smoothie offers everything I need to feel armed and ready to tackle Monday’s madness.
At first glance, this glass of goodness could elicit a “ewww” from a smoothie drinking newbie. But don’t let the deep purple/almost brown color fool ya. This concoction is not only full of all things right and wonderful, it is delicious to boot. I promise…I even pinky swear!
Start by placing a large handful of spinach in your blender followed by a frozen banana and a large handful of fresh or frozen blueberries. I used frozen.
Add 2 to 3 Tbsp of hemp protein powder and 1 Tbsp of chia seeds. Hemp protein powder is the only ingredient that might trip up your taste buds. I suggest adding a small amount at first and working your way up over time. Eventually, you will acquire a taste for it. Or, you could forgo the protein powder altogether and add more chia seeds. They are considered a complete protein since they contain all the essential amino acids. If you are following a strict wellness program, you would not want to substitute whey protein for reasons I will discuss later.
Before blending add roughly 1 cup of coconut water. The amount will vary depending on how thick or thin you like your smoothie. I used coconut water with pineapple. Use plain coconut water or filtered water if you prefer.
